Well, we are through the first seven days of 31 Days of Bison and still going strong! In the first week, we brought you recipes for:

It was a fun and delicious first week – filled with lots of Bison Steak! Nate (our photographer) has said that his favorite of the week was a tie between the Southwest Bison Steak Wraps and the Greek Bison Steak Salad. Mine was the Bison Steak with Penne Pasta & Vegetables.
