Fall is just around the corner, bringing us to tailgating season which can often be synonymous with burgers, hot dogs and chili while cheering on our favorite teams. Let me assure you, coming from the Husker state, we know a little bit about tailgating! But just because it’s tailgating season, doesn’t necessarily mean you have to sacrifice healthy choices. I have compiled a list of 10 great Game Day recipes – whether you plan to be tailgating in the stadium parking lot or enjoying food, friends and football in the comfort of your home, we’ve got some recipes sure to please the fans made with lean bison meat that you can feel good about serving!
1. Pulled BBQ Bison
There are two great things about this recipe: 1. The way your house will smell when you wake up in the morning (or all day long, depending on when you plan to serve this dish) and 2. The awesome, tender taste of this fall favorite!
This BBQ Bison recipe takes hours of slow cooking before the bison is tender enough to pull apart with a fork. If you plan to serve this meal around lunchtime, you’ll probably want to put it in the oven before you go to bed at night and you’ll wake up to the wonderful smell of BBQ Bison. If you plan to serve it in the evening, you’ll probably be good putting this on in the morning. Another great thing about this recipe, once you’ve made it, it can sit in the crockpot for most of the day and your guests (or family members) can serve themselves whenever they’re hungry.

2. Fiesta Bison Hot Dogs
This is just one way to top these delicious, all natural gourmet bison hot dogs. Hot dogs are a staple to any pre-game or gameday party and you can feel a little better about serving your friends and family these bison hot dogs. Just check out the label: Ingredients: Bison, water, vinegar, salt, spices, sugar, paprika, celery powder, beet powder, garlic, onion, sea salt.
Don’t like the idea of topping your hot dog with fresh avocado (a super food!)? That’s OK – serve it with the normal hot dog staples: ketchup, mustard, onion, relish, etc.
3. BBQ Cocktail Bison Meatballs
BBQ Cocktail Bison Meatballs are a perfect appetizer/all day crockpot food to sit out. Just cook these, place them in a crockpot with a little extra sauce and set out toothpicks and paper plates and let your guests go wild with them!
4. Bison Reuben Crescent Roll Appetizers
This is an easy recipe that works great for finger food or appetizers. Similar to “pigs in a blanket” this flavorful rollup is great for guests to snack on while waiting for the main dish.
5. Bison Kabobs
Kabobs are great for grilling and a great way to mix in some vegetables in your gameday meal! Make these kabobs ahead of time and stick them in a container inside your cooler – then you just need to take them out when you’re ready to grill!
6. Nebraska Bison Stuffers
This recipe isn’t well suited for the tailgate, but it’s perfect for those game day parties inside! Ground bison and cabbage may not sound delicious, but let me tell you – add the sweet, doughy flavor of the bread and it’s awesome! Add in a little cheese and these stuffers are PERFECT for any fall day – especially one spent watching football. I wait for these all year long!
Chili is a gimme for any football/fall get-together. Use your own favorite chili recipe and substitute lean ground bison, or use this rustic bison chili recipe.
8. Bison Sloppy Joes
The great thing about so many of these recipes are that you can cook them and then let them sit in a crockpot until you are ready to serve (or until your guests are ready to eat!) This really makes hosting and enjoying a football game a breeze. Everyone can get up at a commercial break or official review and get what they want. Sloppy Joes are another such recipe. All you have to do is prepare the meat, set out some hamburger buns and toppings, and you’re good to go!
9. Grilled NY Strip Steaks with Rosemary & Lemon Marinade
Are you looking to serve your guests something a little fancier? Consider this steak recipe. It’s an awesome combination of flavors – rosemary, lemon and bison and it will be sure to please! It’s recommended with a Bison NY Strip, but I’m sure it would work great with any lean bison steak.
10. Bison Burgers
This list would not be complete without suggesting an All-American Bison Burger for the game day menu! All you need is some all natural bison meat or pre-formed bison patties to get you started.
