New Shipping Policy for Bison Meat Orders

From time to time, here at NebraskaBison.com, we re-evaluate our policies and procedures to make sure that we are offering the best service and product possible for you, our customers. It was in this re-evaluation that we determined, through a trial run and thorough shipping cost data analysis that it was time we give our Shipping Policy an update.

The new policy is applicable to all frozen bison meat orders being shipped to the 48 continental United States. (Alaska and Hawaii will still be charged according to our previous model). We now have two Flat Shipping Rates based on the subtotal of your order (prior to shipping being calculated).

Saturdays Selling Bison Meat at the Farmers' Markets

I've got some great news for our local fans! This summer our team has entered into a new realm – the world of Farmers' Markets.

We're very lucky that our two ranches are both nearby GREAT farmers market communities: The Haymarket Farmers' Market in Lincoln, Nebraska and the Farmers Market of the Ozarks in Springfield, Missouri.

The Haymarket is a district in downtown Lincoln which has grown exponentially over the past couple of years, and it's only 30 miles from the ranch in Adams! The city has heavily invested in the area by adding a sports/concert arena which has led to new housing, retail and restaurant developments all over the area. It was incredible to watch the transformation, and the Haymarket is now the go-to place in Lincoln.

I spent the past week at our Missouri Ranch location (Miller Bison at Elkhead Ranch). If you're familiar with our operation, you may know that the owners of NebraskaBison.com own and operate two separate ranch locations–the home ranch in Adams, Nebraska where the business began, and a second ranch near Springfield, Missouri which has allowed Randy and Jane to expand their operation and their herd.

Last week our Missouri ranch location was the site of a ranch tour for bison producers from all around the United States and Canada as part of the National Bison Association's Summer Bison Conference, so I was able to spend some time down at the ranch as everyone got ready for the company.

Lucky for me, the summer conference coincided with calf season here at our ranch. I've worked for Randy and Jane for four years now and this is the first time I've had the opportunity to be around when calves are getting ready to come.

10 Things you Might Not Know About Bison Meat

If you've just recently been introduced to bison meat, you might have some questions. After several years of running an online bison meat store and hosting booths at events and farmers' markets, I've compiled a list of 10 things you might not know about bison meat to answer some of those questions. If you have more questions, don't hesitate to ask!



1. Bison meat is low in fat. In a 3.5 oz. serving of cooked meat you will find just 2.42 g. of fat. (Source: National Bison Association)

2. However, in that same serving of bison, you will find 28.44 g. of protein! (Source: National Bison Association)

3. Bison can be cooked in all the same ways as beef, but the key is LOW and SLOW. Due to its incredible leanness, bison will cook much faster.

Whether it's a backyard BBQ, a parking lot tailgate party or just a beautiful day spent at a park, grilling dinner is a wonderful way to spend time with friends, family or neighbors while preparing a healthful and delicious meal.

One of the great things about grilling is that it can make dinner a social event. REMEMBER! When making a bison burger, the key is not to cook it too fast or too long. Aim for medium or medium rare. If you go to well-done or medium well, your burger will probably be chewy and lose a lot of it's good flavor and juiciness.

Meet a new Low-Fat / High Protein Food: Bison Meat

Yes, that bison... the one you might initially think of as "buffalo", the one that freely roamed the American plains for thousands of years and is considered a staple of American Folklore and history.

But what you may not know is bison is quietly stampeding into the meat market through online retailers and grocery stores as a lean, high protein red meat option (which just so happens to be rich in a sweet, wonderful flavor!)
Bison Meat: Low in Fat, High in Protein
Lean bison meat contains only 2.42 g. of fat per 100 g. serving. This compares to 18.54 g. of fat per 100 g. serving of Choice Beef. This decrease in fat, translates to an increase in grams of protein. That same 100 g. serving of lean bison contains 28.44 g. of Protein while the serving of beef contains 27.21 g.
