Whether it’s a backyard BBQ, a parking lot tailgate party or just a beautiful day spent at a park, grilling dinner is a wonderful way to spend time with friends, family or neighbors while preparing a healthful and delicious meal.

One of the great things about grilling is that it can make dinner a social event. Friends and family members can gather around the grill, watch their meat being cooked and play games or have conversations before, during and after grilling time is over… and that doesn’t even begin to cover the awesomeness of making your whole neighborhood smell of awesome BBQ all afternoon or evening.

At the same time, a good afternoon of grilling is about so much more than spending time with friends, family and neighbors; it’s of course, just as much about the food you’re cooking.

If you don’t already know about bison, or if you haven’t yet tried it… allow me to introduce you.


Bison meat is a meat HIGH in protein and LOW in fat, calories and cholesterol. In other words: the perfect meat for your grill!

But be careful. Because, bison is so low in fat, you need to use care when cooking it. Fat normally serves as a barrier or insulation while cooking… as bison contains much less of this insulation, you’ll want to make sure you cook it LOW and SLOW. So, just turn down the heat a bit if you’re using a gas grill, or place the meat farther away from the charcoal.

You’ll also want to keep your bison meat to medium doneness or less. “Well-Done” does not bode well for bison meat. If you’ve ever experienced tough or chewy bison meat in the past… the cooking may have been why.

You may still be wondering, however, what cuts of meat you can get with bison.

Not to worry! Bison pretty much creates all the same cuts you know and love from beef. Want a burger? Go for it – they are amazing! Bison Burgers are juicy and have a deliciously rich flavor.

How about a juicy ribeye? We’ve got that too! Although these have more marbling than most bison steaks, it is still considered quite lean, considering. And it’s so incredibly tender.

How about ribs, filet mignon, NY Strips, top sirloin, flank steak? We’ve got them all — and even more!

But I thought bison were endangered, you might be thinking… NOT SO!

While it’s true that at one point in our history bison were on the brink of extinction due to westward expansion and the intentional killing of thousands and thousands of bison… bison have been off the endangered species list for many years.

Because of the dedication of private ranchers who feared losing this amazing and iconic animal for good, the bison were saved and brought back from near extinction.

The recent demand for bison meat is actually great for growing the bison population. More and more ranchers are getting involved in raising bison and growing their herds and today the bison population is not only stable, but thriving. Currently it is estimated that there are approximately 500,000 bison in North America.

Let me quench one final fear: Taste…

Sometimes I come across people who worry that bison will taste gamey or tough. But it’s all in the quality of the meat you buy and how you cook it. Buying good quality bison meat from a reputable rancher will ensure that your bison tastes like it’s supposed to: similar to beef with a rich, slightly sweet flavor.

And as long as you heed my advice above regarding cooking (low and slow, not over medium doneness), you won’t have to worry about tough or chewy meat either.

Oh, and by the way, did I mention that bison is raised naturally, without growth hormones or steroids?

Bison spend most of their lives grazing on grasslands and are minimally handled by ranchers. Bison meat is all natural, produced without the use of hormones, steroids or antibiotics.

So there you have it.

Bison meat is healthy. It’s high in protein and low in fat. It tastes good and is raised naturally. When you’re buying bison meat, you’re buying it from real people, who work hard to bring you honest, responsible meat. So you can really feel good about putting it on your grill and sharing it with friends.
