As promised in last week’s post about tailgating with bison meat, this week I’m bringing you some suggestions for cooking bison meat when you prefer to enjoy Gameday from home. This is one of my absolute favorite things about fall — preparing delicious tasting (and smelling) foods, some of which just cook and simmer all day long and then sharing them with family or friends while enjoying a day full of football.

So below you will find 3 of my go-to Gameday meals… all using bison meat.

Bison Chili

You just can’t beat chili on a gorgeous fall day. It’s perfect. All you have to do is make a little prep work in the morning, adding all the ingredients together and you can literally just let it simmer all day. The house will smell wonderful and you can just enjoy your day!

Bison is easy to incorporate into chili. You can still use your favorite chili recipe, all you have to do is use bison for your meat and cook it over just a little bit lower heat. If you’re looking for a new chili recipe to try… consider this Rustic Bison Chili recipe from the National Bison Association.

For a little Nebraska / Midwestern flair, try some cinnamon rolls on the side. Not the cheap kind… but real, big gourmet-type cinnamon rolls that have a glaze instead of frosting. I recently learned that this is considered more of a Nebraska area tradition. But we love it here!

Nebraska Bison Stuffers

This recipe, may not sound like much, but it is one of the meals I look forward to most in the cold weather months. It takes a lot of work, but it is certainly worth the time and energy. These Nebraska Bison Stuffers are little dough filled pockets of bison deliciousness.

While I usually take mine plain, I definitely do enjoy adding in a little cheese now and again. Nebraska Bison Stuffers are a great way to show off the rich, meaty taste of bison!

Like I said, these can be a lot of work… but they really are a labor of love. With handmade dough made from scratch and a simmering pot of filling, you’ll really feel like you can do just about anything when the work is through!

Pulled BBQ Bison Sandwiches

Here’s another meal in the category of “make it ahead and let it set”. I adapted this recipe from my mother’s amazing pulled pork recipe and it translates beautifully to bison — arguably even more tender and amazing! One thing I love about this recipe is you can do the first couple steps right before you go to bed at night and let the roast cook all night long while you’re sleeping. When you wake up, you won’t believe how amazing your house will smell!

The prep work is pretty easy for this recipe as well. Once the roast is cooked and pulled, you can set it in the crockpot for the rest of the day and let everyone help themselves all day long! Plus… this makes for awesome leftovers… you just can’t make too much of this!

As you can see it’s easy to incorporate bison into your weekend football meals without sacrificing taste, while still utilizing this lean meat! I, myself, will be serving up a bison taco bar this Saturday when our Nebraska Huskers kick off against Fresno State!
