The Ribeye Steak is well known for it’s top-notch flavor and tenderness and it holds up (and even exceeds expectations) in bison. The meaty ribeye is a favorite among steak lovers, and that is why I’m so excited to point out a couple additions to the menu that we’ve recently rolled out.

We know that everyone has a preference when it comes to steak. You might like it bone-in, or maybe you prefer to keep it bone-out. Maybe you like your steak to be just a little bit thicker. Everyone has the way they like their steak to be, and that’s why we’re so happy to be able to offer you three different choices when it comes to the Bison Ribeye Steak.

Classic Bison Ribeye

Of course, we have our Classic Bison Ribeye. This is the cut we carried when we first opened our virtual doors and sent out our first orders back in 2011. This is a large 12 oz. steak that has all the tenderness and flavor of the ribeye that you love.

You won’t find a bone in our classic cut, just 12 ounces of delicious red meat.

Bone-In Bison Ribeye

However, we heard you loud and clear as we got plenty of phone calls and emails over the years asking what options we had for bone-in bison meat and decided simply offering our tasty Bison Short Ribs was not enough… we had to have a bone-in bison steak option.

So this is where the Bone-In Bison Ribeye comes in. Weighing in at 14 oz, this Ribeye Steak boasts the extra flavor that cooking on the bone acquires. Also known as a Tomahawk Steak or Cowboy Steak, this cut of ribeye is a real treat.

Extra-Thick Bison Ribeye Steak

Then, finally, we have a cut made for those who like their steak to be on the thicker side. This giant 18 oz. steak (without the bone), generally stands about an inch and a half high and packs in all the flavor and tenderness of that meaty Bison Ribeye!

The Popularity of a Bison Ribeye Steak

People enjoy the Bison Ribeye for a number of reasons… many of which are probably the same as whey they liked a beef ribeye – it’s rich, meaty flavor and wonderful tenderness.

It’s true that even in bison the Ribeye is one of the more fattier selections you can get. It will contain some marbling and doesn’t quite boast the extraordinary nutrition facts panel of a bison sirloin or filet. However, when compared to it’s beef counterpart, there’s no question the Bison Ribeye wins there too.

In our 12 oz. Classic Bison Ribeye, you will only find 8g of fat and 390 calories… that’s in the WHOLE steak! Plus, there’s a whopping 75g of protein.

Comparably, according to this site, just a 3 oz. serving of Beef Ribeye has 207 calories 12g of fat and 24g of protein.

So, it’s not hard to see why the Bison Ribeye is so popular!
